Vegetarian Pizza

It was pizza for me last night. A bit different from the usual way I make it, but very simple and full of flavour.

Here's what you do:

1. Buy dough from Capers (or make your own if you're really ambitious) and roll it out thinly.
2. Mix together a log of soft goat cheese, lots of chopped fresh basil, and some grated romano cheese.
3. Spread cheese/herb mixture on base as if it was the sauce.
4. Cut some cherry/grape tomatoes in halves and arrange cut side up on pizza.
5. Thinly slice a whole zucchini and arrange on top.
6. Drizzle with olive oil and sprinkle with sea salt and freshly ground pepper.

Bake at 400F for about 20 mins (or until golden brown).

Here it is:

Thanks for the recipe! I'm so excited to try making this. Anything that combines goat cheese, roast tomatoes, and basil is sure to make me happy. And the pics are drool inducing, lighting or no lighting...

I agree. And the pictures look great - warm and inviting. Mmm, tomatoes.
